Prof. Claire Gaiani’s research currently focuses on characterizing the next generation of agroresources and food-waste to develop sustainable and novel ingredients for the food industry and healthy smart foods. She leads several fundamental and industrial research projects, all related to the formulation of natural bioactive compounds (probiotics, glycans, polyunsaturated fatty acids, flavonoids, etc.) into powders with unique attributes. Collaboration with world-leading companies and universities is a key part of her research.

Dr. Jennifer BURGAIN's research cfocuses on production and characterization of food powders obtained from agroresources and co-products. She particularly focuses on powder performance while they are subjected to a controlled storage (physicochemical features and technofunctionality) and the impact of glass transition on these characteristics. The use of a multi scale approach provides the opportunity to gather a complete and complex set of data and particularly at the particle level as she manages an AFM equipped with a controlled environmental chamber.

JAIME PONT SANS, Technical Director at ATOPOLS for over 30 years, and Head of the engineering department for over 40 years. He is in charge of designing and manufacturing atomisers and all related equipment, such as cyclones and scrubbers, and, for several years now, designing special sensors for the real-time monitoring of parameters in the atomisation process.
Neus Isidro leads the Encapsulation Technologies division at Ecopol Tech, focusing on the development of advanced encapsulation solutions for personal care, laundry, and pharmaceutical applications.
With a strong background in polymer chemistry, she specializes in polymer design and innovative materials for encapsulation. Since joining Ecopol Tech in 2019, she has played a key role in driving innovation and scaling technologies for industrial applications.
Gesine Harms is an R&D Principal Scientist at Kerry Group, specializing in flavour spray drying and encapsulation technologies. As a Global Subject Matter Expert in Taste Delivery Systems, she focuses on the development and optimization of encapsulation processes for food and flavour applications.
With extensive experience in spray drying and ingredient functionality, her work centers on improving product performance and process efficiency through advanced formulation strategies. She has particular expertise in the use of maltodextrins across a range of dextrose equivalent (DE) values, supporting their effective application in encapsulation systems.
At Kerry Group, Gesine contributes to innovation in taste delivery, bridging scientific understanding with practical industrial solutions.
Dr. Lorena Sanchez is R&D Director at Kapsera, specializing in microencapsulation technologies for applications in agriculture, animal feed, and food systems. She has over 9 years of experience in the agrifood industry, with a strong focus on alternative proteins and sustainable ingredient development.
Her work centers on designing innovative, nutritious, and environmentally friendly solutions, contributing to the transition toward more sustainable and circular food systems. She has extensive expertise in biotechnology, food technology, and protein diversification, with applications ranging from human nutrition to animal and aquaculture feed.
